Banquet Revenue
Definition
Revenue from food, beverage, and meeting-space services attached to events — weddings, corporate dinners, conferences, banquets. Distinct from in-house F&B revenue (restaurant, bar) generated by individual guests.
What it tells you
For conference-strong properties, banquet revenue can equal or exceed F&B revenue from individual guests. The margin profile is different (higher gross margin on banquet F&B; coordination cost is higher).
How to track it
PMS or POS systems usually distinguish banquet from in-house F&B. Tag F&B revenue with the parent event (where applicable) to attribute revenue to specific MICE business.
Where it fits
Banquet revenue is a meaningful component of MICE economics. A group inquiry’s true value includes the room nights plus the banquet attached — looking at room revenue alone undercounts the value of MICE business.
